The Magdalena, a triumphant classic

Magdalenas, clásico triunfante

A spongy, golden sweet that has endured through the centuries, winning over breakfasts and afternoon snacks with its unmistakable texture and flavour.

The origin of magdalenas is a debated topic. Some researchers suggest they originated in France, where, in the 18th century, a young woman named Madeleine Paulmier prepared these small cakes for King Stanislas Leszczynski, who then popularized the recipe at the Versailles court. Others claim they were created in northern Spain, specifically along the Camino de Santiago, by a young woman named Magdalena, who sold these sweets as a snack for pilgrims.

According to data from the Ministerio de Agricultura, Pesca y Alimentación (MAPA), in 2023, each Spaniard consumed an average of 6.2 kilograms of baked goods and pastries, with magdalenas accounting for 16% of this consumption, making them one of the most prominent products in the sector.

The traditional recipe includes flour, sugar, olive oil, eggs, milk, yeast, and lemon zest. They are usually round and wrapped at the base with pleated paper.
